Ingredients
2 cups wild rice (see note)
4 Tbs extra virgin olive oil, divided
1 peach, peeled and diced (for dressing)
4 Tbs balsamic vinegar
2 Tbs honey
1/2 tsp black pepper
1/4 tsp salt
4 peaches, sliced and grilled
4 green onions, sliced
2 Tbs fresh parsley, finely chopped
1/2 cup pecans, halves and pieces
4 Tbs goat cheese, crumbled
Directions
  1. Cook the rice according to package directions. Toss with 2 tablespoons of oil. Set aside to cool. In a food processor, combine the diced peach, vinegar, honey, pepper and salt. Puree to combine. Pour over the rice. Toss to coat. Refrigerate for 4 hours or overnight.
  2. When ready to serve, stir in the grilled peach slices, onions and parsley. Scatter the pecans and cheese over the top.

Note: One cup of uncooked wild rice equals 3 cups of cooked rice.

Directions
